Great event last night!
Everyone did great! I learned a lot!
Here are some of the recipes from the party.
Tripe Berry Smoothie
2 cups of mixed frozen berries (blueberries, raspberries, blackberries)
1 cup of apple juice 3/4 cup of vanilla flavored yogurt
1 scoop of vanilla frozen yogurt
*Mix all ingredients together and add more apple juice if needed.
Orange Dream Smoothie
1 container of vanilla frozen yogurt or ice cream
1-2 cups orange juice
Tropical Mango Smoothie (Lactose free)
2 cups frozen mango, papaya, and strawberry blend (found at Costco)
1 1/3 cup coconut milk
2 teaspoon honey
1/2 tsp. vanilla
Fruit Dip
6-8 ounce tub of mascarpone cheese
1/4 cup honey Mix both ingredients together with spoon.
Turbo Hummus
(adapted from Alton Brown by Belinda and Hillary Pond)
(We almost always double this recipe in our 14-cup food processor)
1-2 cloves garlic (or jarred, minced garlic)
1 can garbanzo beans (drained and rinsed)
2 T. tahini (sesame seed butter found near peanut and almond butter in health food section)
2 T. dried parsley (or 1/4 c. fresh)
1 lemon, zested and juiced
Pinch freshly ground pepper
1/2 tsp salt (or to taste)
1/4 c. extra-virgin olive oil
In food processor, chop the garlic finely. Add the beans and chop. You may have to scrap a few times. Add tahini, parsley, lemon zest and juice, pepper and salt. Process until it forms a paste. Drizzle in the olive oil and process until it reaches a very smooth consistency. Taste and add more salt, pepper and lemon or lime juice as desired. I have sometimes added jarred, roasted red pepper as well. The options for add ins are endless!
